- 1 tablespoon coriander seeds
- 1 teaspoon cumin seeds
- 1 teaspoon peppercorns
- 4 green chilies
- 4 lemongrass (small sticks)
- 3-inch Galangal
- 5 kaffir lime leaves
- 4 green chilies
- 6 shallots
- 6 garlic pods
- 3/4th cup coriander leaves
- 1 teaspoon salt
Instructions
- These all the ingredients to make Thai green curry paste.
- Toast the coriander seeds, cumin seeds, and peppercorns for 10 to 20 seconds over low-medium heat.
- Once Roasted, transfer to the blender
- Grind to a fine powder
- Now, add lemongrass, green chilies, kaffir leaves, and galangal to the same blender
- Pulse for 30 to 40 seconds.
- Add coriander leaves, shallots, garlic, salt, and 1/2 cup of water. Pulse to make a smooth paste. The green curry paste is ready!
