Shrimp Scampi recipe Rich buttery shrimp soaked in aromatic garlic infused sauce is a treasure trove of complex flavours. Renowned as Shrimp Scampi on a bowl of pasta, it is one of a classic kind.


  • 1 cup Shrimp – ( 250 grams)


To cook Shrimp: 


  • 1 teaspoon olive oil
  • 1/2 teaspoon chilli flakes 
  • 1/2 teaspoon garlic (minced)
  • 1/4 teaspoon salt  

To Scampi Sauce: 


  • 1 teaspoon olive oil 
  • 1 teaspoon Butter 
  • 1.5 teaspoon garlic (minced )
  • 1 teaspoon chilli flakes 
  • 1/2 teaspoon paprika 
  • 1/8 teaspoon pepper powder (optional) 
  • 1/2 chicken stock cubes 
  • 1 teaspoon lemon juice 
  • 1 teaspoon parsley leaves


How to Cook Shrimp:


  1. Add chili flakes, garlic, and salt to a shrimp. Combine thoroughly. Allow for a 5-minute of resting period.
  2. In a pan, heat the olive oil and add the shrimp, spacing them evenly in the pan. Allow the shrimp to cook for 1 to 2 minutes.
  3. Transfer the shrimp and juices to a another bowl and set aside. 

To make Scampi Sauce:



  1. In a same pan, heat the olive oil and butter, then add the minced garlic and chili flakes. Cook for a few seconds on low heat, stirring constantly, until fragrant.
  2. Stir in the paprika and salt.
  3. Add in the chicken stock cubes ( crush them and add) and lemon juice. Stir the scampi sauce for 30 seconds.
  4. Stir in the shrimp.
  5. Stir the shrimp for a few seconds, then add the remaining juices.
  6. Cook the shrimp with sauce for another 30 seconds. Sprinkle chopped parsley and serve. 






Expert Tips

Leaving the shrimp heads and shells on (if you like), enhances the deep saline taste

Do not wait for the shrimps to curl into rounds; it’s very easy to overcook shrimps

If you want to increase the sauciness, you can always add  ¼ cup of pasta cooked water

When you’re adding wine, dry crisp white wine like unoaked chardonnay, pinot grigio or sauvignon blanc is the perfect compliment

While your pasta is waiting, toss them with a little olive oil to avoid sticking.
