How do you make shallots chicken roast?

Firstly, roast the coconut, peppercorns, cumin and dry red chilli. And grind to a fine paste.

Add the ground masala to the washed chicken pieces, add ginger garlic paste, turmeric powder, salt, lemon juice and mix thoroughly and marinate for 10 mins.

Then, heat up oil, add all the seasoning curry leaves, cinnamon and cloves.

Add in marinated chicken pieces and roast to nice golden brown colour.

What cut is best for making this recipe?

Curry cut is constantly tasted great, chicken with bone in will works fine.

Can I replace onion instead of shallots?

Indeed! They are interchangeable. Shallots have a sweet and gentle flavour and It tastes better for the roasting type of dishes.

Tips to make the best Shallots Chicken Roast:

Cold-pressed Peanut Oil-  The real taste of the recipe totally depends on the oil. The cold-pressed peanut oil has some distinct flavour that makes this Shallot chicken super delicious. ( Gingelly oil works well too!)

Quality Chicken Pieces: Get Tender and fresh chicken pieces that helps you to get the juiciest shallot chicken.

Freshly ground Masala:  Always make a fresh batch of ground masala for this shallot chicken recipe, because the aroma of the freshly ground is extremely unique.

Marinating: Marinating for 15 mins is actually enough for this recipe. For more flavours, simple prick the chicken with a fork and marinate the chicken overnight for the most flavorful and moist shallot chicken.

Roasting: The final step of roasting the chicken with shallots, keep your flame to medium-high and keep stirring until the chicken gets nicely simmered and roasted well.

This can be best served with Rice, Curd rice, Rasam rice, simple south Indian sambar and roti.

How to make shallots chicken with step by step pictures:

grated coconut, dry red chilli, peppercorns, cumin are taken in deep saute pan
Heat up 1 tbs of oil, add grated coconut, cumin seeds, dry red chillies and pepper corns. Also add 1 tsp of fennel seeds if you would like.

Saute until the grated coconut has turn to a light golden brown. Remove from heat.

Bring to room temperature, add 1/4 cup of water and grind to a smooth paste.

Now, Throughly Wash the chicken pieces and pat dry them. Add in a mixing bowl.

Add in ground coconut paste, turmeric powder and salt.

Squeeze some lemon juice and mix well

Let it marinate for 15 to 30 mins. At this stage,give a taste test, add salt if needed or any other required spices.

After the marination is done, Heat up 2 tbs of peanut oil over a medium heat.

Add cinnamon sticks, cloves and curryleaves. Let it sizzle for few seconds.

Now, Add 1 cup of  peeled and sliced shallots

Saute until the shallots turns translucent, add salt if needed.

Now the shallots and ground coconut masala has turned to a nice golden colour along with  chicken pieces has roasted well.

You can see, a thin glaze of oil oozes out on sides. It’s time to remove from heat. Sprinkle some handful of chopped coriender leaves.

Ingredients

Scale
  • 1/2– Chicken
  • 1 cup Shallots
  • 2 tbs Peanut oil
  • 1 tbs Ginger garlic paste
  • 1 tbs Coriander leaves
  • 1 spring Curry leaves
  • Salt

To grind:

  • 1/2 cup Coconut
  • 1 tsp Cumin seeds
  • 1 tbs Pepper corns
  • 4 to 5 Dry red chilli

Seasoning:

  • 1 inch stick Cinnamon
  • 4 Cloves

Instructions

  1. Heat up oil, add coconut, dry red chillies, pepper corns, cumin and roast until the coconuts are nicely browned. 
  2. Bring to room temperature, Add the roasted ingredients to a blender, add 1/2 cup of water and grind to a fine paste.
  3. Add ground masala to chicken pieces, ginger garlic paste, turmeric powder and salt. Mix well and marinate for 15mins.
  4. Heat up oil, add the seasonings once that splutter. 
  5. Add shallots and saute for 5 mins. 
  6. Add marinated chicken pieces and saute for good 10 mins until the chicken is nicely golden color. 
  7. Sprinkle some chopped coriander leaves.
