Saffron Rice Kheer / Rice pudding is one most popular Indian dessert made of rice, milk, nuts, saffron. “Kheer” it is the one basic and easy Indian dessert that we make for any occasions or celebration. It is usually served at the end of the meal.
There is a variety of kheer, the variations are totally endless. You can try my two favourite kheer recipes tender coconut kheer and paneer kheer which is always a huge hit at my home.
In the southern part of India, we call Rice kheer as Rice payasam. This can be served hot or chill.
What Rice best for making saffron rice kheer?
Usually, Basmati rice is used for making kheer, but you can also use any variety of rice. Always make sure you coarsely grind the rice so you get the desired kheer consistency.
Are rice kheer and Rice pudding are the same?
Yes! They are the same. You can add Keira water/ rose water to pudding. Rice pudding is always served chill.
Can I add dry fruits and nuts?
Of course, you can add any type of dry fruits and nuts can be added. You can roast the nuts in ghee for more flavours.
How to make sugar-free rice kheer?
You can add 10gms of sugar-free sweeteners.
Can I add jaggery for Rice kheer?
Yes, you can add jaggery. Make jaggery syrup and then mix in.
Should I have to soak rice prior to cooking?
Usually, the rice is soaked 15 mins to 30 mins prior to cooking. But you can also make without prior soaking. Just coarsely grind the rice and mix with water.
What causes thickening for rice kheer?
The starch in rice makes the kheer to thicken up, also to liquidfy if thickens, add milk and stir well.
Can I add khoya for rice kheer?
Yes, you can mix khoya. Add 2 tbs of khoya for this recipe. Adding khoya makes it richer and creamier.
Can I skip condensed milk?
Yes, of course, you can. Just double amount of sugar you need for this recipe and also keep stirring the milk until you get the desired consistency.
Adding condensed milk is a simple short-cut way to get a thickened milk, it also gives you sweetened taste and creamier rice kheer.
How to avoid lumpy Rice kheer/rice pudding?
You get lumpy rice kheer only if the amount of milk is less, Once the rice is being cooked it tends to thicken up quickly so you need a required amount of milk.
How long does the kheer last in the refrigerator?
Rice kheer can stay well in the refrigerator for 2 to 3 days.
How to make Rice Kheer with step by step pictures:
Add saffron and quick stir. You can also add saffron mixed with 1/4 cup of milk and then mix. You will get a gorgeous mild yellow colour.
Keep in refrigerator for 10 to 15 mins and Serve Chill. Rice pudding is ready to be served

Ingredients
- 2 cups Milk
- 2 tbs rice
- 3 tbs condensed milk
- 4 tbs sugar
- 1 tsp cardamom powder
- 4 to 5 threads saffron
- 2 tbs Nuts
Instructions
- Heat up milk in deep heavy bottomed pan over a low-medium heat. Let it boil for sometimes.
- Coarsely Grind Rice in blender, add 1/4 cup of water and stir make sure there is no lumps.
- Once the milk comes to boil, add rice and stir for 5mins.
- Then add condensed milk and sugar, keep stirring for 10 mins.
- Slowly rice will be cooked and and eventually the kheer thickens up. Keep stirring..
- Sprinkle some cardmom powder and add few threads of saffron and chopped nuts.
- Turn off the heat.
- Let the saffron flavor and color gets infused in kheer.
- Serve warm
- Or you can keep the kheer in refrigerator for 10 to 15 mins and Serve chill.
