How to make Roasted Chicken:

These all the spices I have taken, chili flakes, dried basil, dried oregano, mixed herbs, pepper powder, salt.

Add them in and mix well

Take a baking tray that can hold the whole chicken and also to roast the vegetables

Place the chicken over the baking tray

Place the chicken over the onion.

Insert whole garlic, potato, lemon slices inside the cavity.

Tie the legs using a thread. Chop potato and garlic, mix with the leftover garlic herb butter and add to the sides of the pan.

Add some chopped garlic over a top, squeeze some lemon juice on top. Now the chicken is ready to pop in the oven.

Roast in the preheated oven 430 degrees F/220 Degree C For 1 hour 15 mins.

Bast the chicken halfway until the chicken is roasted. Spoon the left-over juices over the chicken. Repeat basting until the chicken to a golden colour.

Tips to make the best garlic-herb roasted chicken:

1.Chicken: Chicken with skin on is required for this recipe.

2.Garlic: Add minced/finely chopped garlic to get a light crunchy tidbit of roasted garlic. However, if you don’t like the tidbits of garlic, you can paste them as well.

3.Spices and herbs: If you get the fresh herbs in hands, please go it. Add chili flakes or pepper powder or paprika powder as per your preference.

4.Vegetables: Use the leftover herbed garlic butter for veggies. For the roasted veggies, you may also use carrot, squash, celery.

1. How long does it take to roast chicken in the oven?

Chicken can be roasted in preheated oven for 430 degrees F/220 Degrees C for 1 hour 30 mins.
Roast the chicken for the first 20 mins, then Remove from oven. Pour over the liquid left out from the chicken. This is called Basting. This should be done to avoid the dryness of the chicken that helps the chicken turns out the juicer. Pop again in the oven.
This process can be repeated again.
Roast till the chicken turns to a nice golden color.

2. What to serve with roasted chicken?

This can be served with bread rolls, mashed potatoes, rice, pilaf.

Ingredients

Scale
  • 1 cup butter
  • 1 tbs chilli flakes
  • 1tbs pepper powder
  • 1tbs dried basil
  • 1 tbs dried oregano
  • 1tsp mixed herbs.
  • 1tbs salt
  • 1/4 cup garlic (minced)
  • 1tbs coriander leaves
  • To Roast & Cavity:
  • 2 garlic
  • 3 potatoes
  • 2 onions

Instructions

1.Take soft butter in a mixing bowl, add chopped garlic, herbs, spices, and coriander leaves. Blend well. Rub some butter over the baking tray, then place the entire chicken.
2.Use your fingertips to open the skin gently and spread the garlic herb butter and apply all over the chicken. Place the whole garlic, potato, and onion into the cavity. Tie the chicken legs using strings.
3.Chop the potato and garlic, mix and throw to the sides of the pan with the remaining garlic herb butter. Throw a little chopped garlic over a top and squeeze a lemon juice over it. The chicken is ready to be popped in the oven.
4.Roast in the preheated oven 430 degrees F/220 Degree C For 1 hour 15 mins.
5.Bast the chicken halfway until the chicken is roasted.
Repeat basting until the chicken to a golden color.
