An all-time favorite classic pineapple cake recipe, this pineapple cake is super moist and spongy.

What’s to love about this recipe is that it is delicious and filled with the fruity flavor of the juicy pineapple slices, not to mention how colorful and attractive it looks.

It appears as a beautiful golden brown top while baking and once you flip it over to serve, you can see the mouth-watering pineapple and cherries waiting to tickle your taste buds. 

My family loved this amazing upside-down cake because of how exquisite it looked on the table and its unmatched fruity flavor and taste.

How to make Pineapple Upside Down Cake:

Grease butter to the bottom of your baking pan, pour in the melted butter.

Sprinkle Brown sugar all over the melted butter.

Arrange the sliced pineapple and cherries and keep refrigerated until you make the batter.

To a mixing bowl, add baking powder, baking soda, and salt. Mix everything and set aside.

Cream butter for 1 minute to get a creamy texture.

Add sugar and beat for another 1 minute

Now add 1 egg white, beat for another 1 minute.

Now remove the toppings from the refrigerator, pour in the batter

Pop into the oven and bake for 35 minutes to 40 minutes. ( Cover with the foil halfway through) Once the cake is baked, keep aside for 20 minutes to bring to room temperature. Before you serve, slide the sides of the cake using a butter knife and invert the cake on the plate. The cakewalk slides off easily.

Tips to make the best Pineapple cake:

1. Whether you use cake flour or all-purpose flour, make sure that you sift it before adding it into the cake mixture.

This ensures that there are no lumps and the batter is easier to mix. 

2. Flip the cake into the serving tray about 15 minutes after you remove it from the oven.

Allowing it to stay in the baking dish for long causes the pineapple to stick to the base and sides of the baking dish. 

3. Unlike normal cake batter, the batter for the pineapple upside-down cake is quite thick.

Scoop it into the baking dish and do not pour it as it will displace the pineapple slices and cherries on the bottom. 

4. Once you arrange the pineapple slices with the butter-brown sugar mixture at the bottom of the baking dish, allow it to cool /refrigerate and settle for a few minutes before adding the batter.

This will ensure that the slices are set and won’t squirm around when you add the cake batter on it.

1. Why does my pineapple upside-down cake sink in the middle?

If you have added an excess of the leavening agent such as the baking powder or baking soda, it sinks in the middle.

This is because more air pockets are created than which the cake can withstand and the center being the softest, sinks.

2. How to fix the sunken cake?

One of the best ways to fix a sunken pineapple cake is by scooping out softened ice cream in the sunken area and making it even and freeze it for about 30 minutes.

Once it is set, you can add the frosting. 

3. Can I use an alternative for yogurt?

Instead of yogurt, you can use sour cream or 3/4th cup milk with 1/4th cup of pineapple juice.

Yogurt is used because it makes the batter thicker and gives your cake a soft and fluffy texture once baked. 

4. Can I store the leftover pineapple upside-down cake?

Although I recommend not storing it in the freezer is because of the simple fact that the texture of the pineapple changes when it is frozen and then thawed.

However, you can store the leftovers in an airtight container for up to 3 days in the freezer.

Ingredients

For Toppings:

  • 2 tablespoon butter (melted)
  • 1/2 cup brown sugar
  • 4 to 5 slices of pineapple
  • 8 cherries

To make Cake:

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3 tablespoon butter
  • 1 egg white
  • 1/3 buttermilk
  • 1 teaspoon vanilla essence
  • 2 tablespoon milk
  • 1/2 cup  sugar
  • 1/2 teaspoon salt

Instructions

Preheat your oven 350 degrees F( 177 degrees C) for 10 minutes prior to baking.

For Toppings:
