What is palak paneer?

Palak( Spinach )and Paneer (cottage cheese). The cottage cheese is cooked in creamy spinach gravy with spices. The spinach is sautéed in butter and pureed to get a creamy consistency and simmered and finished with a dollop of fresh cream!

Palak (spinach)
Paneer (cottage cheese)
Tomato puree
Ginger
Garlic
Dry red chillies ‘
Peppercorns
Chilli powder
Turmeric powder

How to make palak paneer recipe:

These all the ingredients to make palak paneer
butter in saute pan
To a pan, add butter
spinach in saute pan
Add spinach
stir fried spinach in apn
Stir fry for few seconds.

Add into a blender and grind to a fine puree. You may also add 1/4 cup water to puree.

To the same pan, add butter.
cumin seeds is being sizzled in butter in pan
Add cumin seed. Let it sizzle for a few seconds.

Meanwhile, To a blender adds ginger, garlic, dry red chillies and peppercorns. Sprinkle little water and grind to a fine puree.

Add to the pan,

Stir and cook for 3 mins till the raw smell disappears.

Add tomato puree.

stir and cook for 5 mins.

Add chilli powder, turmeric powder and salt… Stir and cook till the raw smell of the gravy disappears.

Stir and cook for 2 mins.

Add the cubed paneer. Cover and cook for a few more.

Tips to make the best palak paneer recipe:

1.Paneer/cottage cheese: Cottage cheese is widely available in India, if you live in abroad it is available in Asian section in the grocery store. Use good quality paneer for best results. 2.Spinach: Get a tender and firm spinach. I usually saute the spinach in butter to enhance the flavour.

3.Grind the masala: The ingredients “ under grind “ has to grind to a very fine consistency that helps to get a smoothy palak paneer.
You may also use soaked cashews as well.

FAQ:

1.How do you make homemade paneer?

Bring milk to boil in a heavy bottom pot. When the milk comes to boil, pour 1 tbs of lemon juice, Immediately you can see the entire milk begins to curdle
Once, it starts to curdle, turn off the heat. Pour it in a thin cheesecloth-lined over the colander and rinse in running water to remove the smell of the lemon juice.
Make a tight knot to a cheesecloth and squeeze more liquids. Place the muslin cloth on the plate with weight/heavy object on top. Let it sit for an hour.
Remove the muslin cloth, you get the thick creamy panner is ready! From 1 litre of full-fat milk ideally, you should get 100gms of paneer.

2. How to soften frozen paneer?

If the paneer has not softened after bringing to room temperature, you can immerse the paneer in warm water for 5 minutes. The water should be enough to cover all the paneer cubes.

 3. How do you serve Palak paneer?

Palak paneer is best served with roti, rice, naan, chapati.

4. Can I use tofu instead of paneer?

Yes! Of course! Stir fry the tofu on butter before you add to the spinach gravy.

Ingredients

1 bunch of palak (spinach)

1 cup of paneer (cottage cheese)

2 tomatoes (puree)

2 tablespoon butter

1 teaspoon cumin seeds

1 teaspoon chilli powder

1 teaspoon turmeric powder

To grind:

4 Dry red chillies

3 garlic pods

3 ginger pieces

1 teaspoon peppercorns


Instructions

To a pan, add butter and spinach stir fry for few seconds. Add into a blender and grind to a fine puree. You may also add 1/4 cup water to puree.

To the same pan, add butter, add cumin seed. Let it sizzle for a few seconds.

Meanwhile, grind dry red chillies, peppercorns, ginger and garlic, Sprinkle little water and grind to a fine puree. Add to the pan, Stir and cook for 3 mins till the raw smell disappears.

Add tomato puree, stir and cook for 5 mins.

Add chilli powder, turmeric powder and salt. Stir and cook till the raw smell of the gravy disappears.

Add spinach puree.

Stir and cook for 2 mins.

Add the cubed paneer. Cover and cook for a few more. Add some fresh cream on top. Give a quick mix and serve!

Palak paneer is ready to be served!
