How do you make Mexican rice?

Firstly saute the rice in oil, then add on the chopped vegetables, tomato sauces, chicken broth and cook till the rice are cooked and fluffy!

What rice is best for making Mexican rice?

Long grain rice- Basmati Rice is always best to make Mexican rice. 

How do you make the rice fluffy and not sticky?

Firstly, rinse the rice in cold water. To make the rice fluffy and not sticky, Saute the washed rice in oil/butter for few seconds and then proceed with the cooking.

Variations you make:

Spices– You can add spices like pepper powder, cumin powder, chilli powder, paprika, oregano. Always add a pinch of the spices not to overpower the flavours 

Tomato bouillons– the authentic recipe call for tomato bouillons if you get it around, add  1 cube for this recipe ( I replaced tomato paste in this recipe)

Vegetables of any choice: You can add veggies like peas, corn.

Homemade chicken broth:  You can combine chicken pieces  with onion, garlic,pepper corns,carrots,coriender, leaves and  some water to immerse the chicken cook over the low flame for 30 mins, strain the liquid, here you go homemade chicken broth. 

For easy version you get the chicken broth cubes and add in the warm water to infuse the chicken broth completely in warm water.

What to serve with Mexican rice?

This is best served with lemon garlic Chicken.

Here is the ingredients to make mexican rice

olive oil has been added into a deep sauce pan

Heat up some olive oil in a deep pan

washed long grain rice is added in the deep cooking pan to get roasted

Add washed basmati rice and toss for a few secs

Chopped onions and garlic is added to the rice being cooked in deep cooking pan

In goes some chopped onion and garlic

Peeled diced carrot is being added to the rice cooked in the deep sauce pan

Add peeled diced carrot

Throughly washed peas is being added to carrots along with rice

Add some 1/2 cup of peas in it

Long grain rice, peas,carrot is being saute in oil in a deep cooking pan

Gently stir them

 Tomato puree is being added to carrot peas mixture cooked with rice in deep pan

Pour in tomato puree

Tomato ketchup is added along with tomato puree, long grain rice,carrot,peas and being saute in deep sauce pan.

Add 2 tbs of tomato paste

Vegetable stock is being poured in tomato mixture,long grain rice, carrot, peas cooked in deep sauce pan

Pour in some chicken stock, add salt. Cover the lid and cook over the medium heat for 15 mins and low flame for 5 mins.

Mexican rice is ready to be served!

Ingredients

  • 1 cup Basmati Rice
  • 1 Onions (chopped)
  • 5 pods Garlic (chopped)
  • 1 tbs Olive oil (extra virgin)
  • 1 cup Carrot (peeled and diced)
  • 1/2 cup Peas
  • 1/2 cup Tomato puree
  • 2 tbs Tomato paste
  • 1 1/2 cup Chicken stock
  • 1 tsp Salt

Instructions

  1. Heat up olive oil over a medium heat, add in washed basmati rice stir gently for 3 secs. Just to make sure the rice slightly covered with oil and toast them.
  2. Add all the ingredients from garlic, onion, carrots, peas, tomato sauce, tomato paste mix in gently.
  3. Measure the chicken broth for the rice quantity and add in. Add salt.
  4. Cover and cook over a medium heat for 10-15 mins. Lower the flame and cook further for 5 mins.
  5. Open the lid, fluff the rice with fork, garnish with coriander leaves.
