How do you make pepper chicken dry?
- Heat up oil, add seasonings, add in onions, ginger garlic paste, tomatoes and cook them until everything turns mushy.
- Add in chicken, freshly ground pepper powder, turmeric powder, salt.
- Cover and cook the chicken for 20 mins until the chicken is cooked.

- Similarly like gingerly oil, you can also make this recipe peanut oil, sunflower oil or vegetable oil.
What part of cut is best to make pepper chicken?
- You can certainly make this recipe with any part of chicken like tenderloin, thigh, drumstick, whole wings, breast fillet.
Variations:
- You can add 1 tsp of chili powder along with pepper powder to make it very spicy.
Grind pepper powder+ 1 tsp of fennel seeds to make fine powder- this gives you more flavor. - You Follow the same method to make in vegetables like mushroom, potatoes, cauliflower, broccoli, cottage cheese.
How do you store leftovers?
- Place the leftover in the fridge for 2 to 3 days in an air-tight container.
- To Re-heat: Re-heat the leftover for 5 to 7 mins over the medium heat.
How do you serve pepper chicken?
This pepper chicken can be best Served with steam rice, Indian bread or starter.

Description
Madurai Pepper Chicken – South Indian Style Pepper Chicken Fry is the spicy peppery coated masala fry, it’s simple and tasty to the core. It has a whole lot of flavors and aroma that goes extremely well with anything.
Ingredients
- 500 Gram Chicken
- 3 Onion (medium size)
- 1 Tomato (big size)
- 1 tbsp Ginger Garlic Paste
- 3 tbsp Dry red chilli
- 1 tsp Mustard seeds
- 1.5 tsp Pepper powder (use according to ur spice level)
- 0.5 tsp Turmeric Powder
- Salt- to taste.
- 1 Bunch Coriander leaves
- 1/2 Cup Water
- 3 tsp Gingelly
- 1 sprig curry leaves
Instructions
- In a fry pan, add gingelly oil, once it heats up add the mustard seeds and dry chilli.
- Add curry leaves. let it splutter. Add onions and fry till the onions are translucent,and add the gingergarlic paste and fry till the raw smell leaves off.
- Add in tomatoes and sauté it for sometime.
- Once it is sautéed well, add the pepper powder and turmeric powder, stir occasionally, make sure do not burn, sprinkle some water if needed.
- Now add the chicken, sauté for 3 mins,cover and cook for 10 to 12mins
- Cook until you get the desired consistency.
- Sprinkle some coriander leaves or curry leaves.
- Serve hot with rice or roti.
