Laksa Noodle Soup recipe

This laksa noodle soup is with the comforting layers of vibrant color and infused with assuasive aroma from coconut milk and with bursting bold flavors with Laksa Paste. This is going to be your new favorite.



To make laksa paste: 

  • 4 Dry Red chillies
  • 8 No’s Cashew Nuts ( soaked in warm water)
  • 1 tablespoon Galangal 
  • 1 tablespoon Lemongrass 
  • 4 shallots 
  • 3 Garlic 
  • 1/2 teaspoon Turmeric powder 
  • 1/2 teaspoon Chilli powder/ paprika 
  • 1/4 teaspoon Cumin powder 
  • 1/2 teaspoon Coriander powder 
  • 1 teaspoon Peanut oil 

To make laksa Soup: 

  • 2 tablespoon peanut oil 
  • 1.5 cups Rice Noodles 
  • 1/2 cup chicken 
  • 3 kaffir lime leaves 
  • 1/2 lemon ( about, 2 teaspoon lemon juice) 
  • 1/2 cup coconut milk 
  • 1/2 teaspoon sugar 
  • 1 tablespoon coriander leaves 
  • 4 tablespoon Laksa Paste
  • 2 cups Chicken stock ( optional or water) 

To Serve: 

  • 2 Lemon wedges 


To make Laksa Paste: 

  1. In a blender, combine all of the ingredients for the laksa paste and blend until smooth.

To make Laksa Soup: 

  1. Soak the rice noodles in warm water for 10 minutes.
  2. In a saucepan, heat the peanut oil, then add the laksa paste and stir for 4 to 5 minutes over low heat, or until the raw smell of the laksa paste disappears.
  3. Toss in the chicken pieces.
  4. Stir Fry the chicken with the laksa paste for 2 to 3 minutes. 
  5. Pour in the chicken stock and water. Sprinkle with kaffir lime leaves and coriander leaves and sugar. Cook for another 5 minutes, or until it reaches a boil.
  6. Meanwhile, drain and set aside the rice noodles.
  7. Now, squeeze in half a lemon and mix well.
  8. Finally, remove from the heat and stir in the coconut milk.
  9. Pour about 3/4 cup rice noodles into a bowl and top with laksa soup. Garnish with fresh coriander and lemon wedges.


The homemade laksa paste is truly flavourful, easy to make, and gives you the right creamy consistency to the soup. However, you can prefer store-bought laksa paste for your convince. 

Use Full fat coconut milk or coconut cream and don’t cook for a longer time once the coconut milk is added. The heat from the soup is enough to infuse the flavors. 

The spice level can be adjusted as your preference. 

Add a pinch of sugar to complement all the flavors. 

Prefer using fresh herbs that give you freshness to the soup.
