Grilled Chicken Ingredients:

Chicken: You may use chicken thighs, chicken breast, or drumstick. Any cut of the chicken works perfectly fine for this recipe.

Ginger garlic paste: Try adding freshly ground ginger garlic paste for more flavors and taste.

Red chili powder: I have used Kashmiri red chili powder for the good color and heat. You may use paprika, cayenne pepper as well.

pepper powder: I have used pepper powder for the good spice and heat to the chicken, You can add as per your spice level.

Turmeric powder: turmeric powder gives you the best blend of color to the grill and has the healing property.

Lemon juice: a squeeze of fresh lemon juice is all you need for the best-grilled chicken, the lemon juice only gives you a tangy taste, it also tenderizes the meat.

coriander leaves: A fresh flavor of coriander leaves in the marinade is delicious, you can use chopped parsley as well.

olive oil: I have used olive oil, you can use vegetable oil or any oil as per your preference.

Wash chicken pieces thoroughly and make a deep slash on the chicken.

To a bowl, add olive oil, chili powder, turmeric powder, pepper powder, ginger-garlic paste, lemon juice, salt, coriander.

Combine all the ingredients to make a marinade.

Add the chicken thigh pieces to the marinade.

Rub the marinade over the chicken thighs thoroughly all through the slashes. Cover with cling wrap and marinate for 30 minutes to refrigerate overnight.

To cook on the stovetop: Place the marinated chicken on the grill pan.

Cook the chicken for 10 to 12 minutes flipping for every 5 minutes or until you see a char mark.

To cook in the oven: Preheat your oven 350 degrees F/180 degrees C. Line the aluminum foil in the baking tray. Place the chicken on the baking tray. Pop into the oven and bake for 20 minutes. Flipping halfway through. Bast, some leftover juice over the chicken to keep tender. Grill the chicken till they are cooked

Chicken Breast can also be used. Make a slash on the chicken that helps to infuse the flavors and also chicken breast tends to cook faster. 

Marinade the chicken with spices, seasoning, herbs, and lemon for a minimum of 30 minutes or refrigerate overnight to get the juicy grilled chicken. 

Grill the chicken, with light basting as required. The basting technique is a must retain the moisture in the chicken. 

If you are not a fan of too many spices, stick to pepper and salt, lemon juice, and some herbs it works well too.

  • 2 chicken thigh
  • 2 tablespoon olive oil
  • 2 tablespoon chili powder
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon pepper powder
  • 1 tablespoon ginger garlic paste
  • 1 teaspoon lemon juice
  • 1 teaspoon salt
  • 1 tablespoon coriander leaves

Instructions

  1. Wash chicken pieces thoroughly and make a deep slash on the chicken.
  2. To a bowl, add olive oil, chili powder, turmeric powder, pepper powder, ginger-garlic paste, lemon juice, salt, coriander.
  3. Combine all the ingredients to make a marinade.
  4. Add the chicken thigh pieces to the marinade.
  5. Rub the marinade over the chicken thighs thoroughly all through the slashes. Cover with cling wrap and marinate for 30 minutes to refrigerate overnight.

To cook on the stovetop:

  1. Place the marinated chicken on the grill pan.
  2. Cook the chicken for 15 minutes flipping for every 5 minutes or until you see a char mark.

To cook in the oven: 

  1. Preheat your oven 350 degrees F/180 degrees C. Line the aluminum foil in the baking tray.
  2. Place the chicken on the baking tray. Pop into the oven and bake for 35 minutes. Flipping halfway through. Bast, some leftover juice over the chicken to keep tender.
  3. Grill the chicken till they are cooked
