This Ghee rice recipe is extremely flavourful, the rice is so fluffy, can be made with minimal ingredients, about to become your new family favourite and on your table under 20 mins or less than that. ghee rice is served in plate with spoon and fork aside.

The ingredients to this recipe are very simple and pantry friendly, but there are very few techniques to make fluffy and flavourful ghee rice recipe.

Ghee rice is an aromatic rice recipe with a distinct flavour of ghee as the main ingredient. It is also spiced rice/neychoru/neyita nuppu in other regions.

How to make Ghee Rice:

Ingredients to make ghee rice are taken in bowl
These all the ingredients to make ghee rice. Wash and soak the basmati rice prior cooking.

Fry the cashews and raisins in ghee for just a few seconds until the cashews are lightly browned and raisins are slightly puffed up. Collect them in a bowl and set aside.

Fry the cinnamon, cloves, bay leaf saute for just a few seconds.

Add sliced onion
peppercorns and sliced onions are in deep pot
peppercorns in ghee for few seconds until fragrant. Collect them in a bowl and set aside.

Add soaked basmati rice and salt.

Stir fry the for a minute over medium heat. Then add the required amount of water, cover and cook till the rice is cooked and fluffy.

Add the fried onions, peppercorns, bay leaf, cinnamon and cloves.

Give a gentle mix and serve.

Tips to make the best ghee rice recipe:

  1. Basmati Rice: ghee rice taste better with basmati rice. Use good quality and long grain basmati rice for good texture.

2.Ghee: Good Quality ghee gives you a great flavour to this recipe. As ghee is the key ingredient for this recipe, it helps you to build the flavours.

3. Saute the Rice: Sauteeing the rice in ghee helps you to get fluffy rice and the grains are separated.

4.Saffron Milk: Saffron gives you the mild yellow colour and distinct flavour to this dish.

5.Nuts: You may also use sliced almonds to this recipe.

1. What is the water ratio for the ghee rice?

I used basmati rice so according to package instruction 1 cup of rice = 2 cups of water in a closed pan.

Ingredients

1 cup of basmati rice
3 tablespoon of ghee
1onion sliced
2 tablespoon of cashews
2 tablespoon of raisins
1 teaspoon of peppercorns
1 bay leaf
3 cloves
1-inch cinnamon stick
1 pinch of saffron
3 tablespoon of warm milk
1 teaspoon of salt


Instructions

Wash and soak the basmati rice prior cooking.
Fry the cashews and raisins in ghee for just a few seconds until the cashews are lightly browned and raisins are slightly puffed up. Collect them in a bowl and set aside.
Fry the cinnamon, cloves, bay leaf, sliced onion and peppercorns in ghee for few seconds until fragrant. Collect them in a bowl and set aside.
Add ghee in a deep pot, add soaked basmati rice and salt stir fry the for a minute over medium heat. Then add the required amount of water, cover and cook till the rice is cooked and fluffy.
Once the rice is cooked, add all the fried ingredients. Gently mix in.
Sprinkle saffron-infused milk, gently mix and serve.
