Ingredients
To chicken batter:
- 1/2 kg chicken
- 3 tablespoon cornflour
- 3 tablespoon all-purpose flour
- 1 teaspoon pepper powder
- 1 teaspoon salt
- 1 teaspoon garlic (minced)
- 1 cup of vegetable oil
To make the sauce:
- 1 tablespoon vegetable oil
- 1 tablespoon garlic (minced)
- 1 tablespoon ginger (minced)
- 5 Dry red chilies
- 3 tablespoon hoisin sauce
- 1/2 teaspoon vinegar
- 1/2 cup water
- A pinch of sugar
- 1/2 teaspoon sesame seeds.
Instructions
To make chicken batter:
- Heat some oil in a pot to deep fry,
- Take chicken in a mixing bowl, add cornflour, all-purpose flour, pepper powder, salt, and minced garlic.
- Mix the chicken to coat the dry ingredients. I haven’t added water. The moisture in the chicken is enough to coat. If you want, you can add just a teaspoon of water for binding.
- Drop the battered chicken one by one in the oil. Fry them to a golden brown
- Take out the fried chicken, collect in the bowl, and set aside.
To make a sauce:
- Heat oil in the cast iron pan/wok. Add minced garlic and ginger. Stir fry for few seconds.
- Stir in the dry red chilies, cook for just a few seconds.
- Stir in the Homemade Hoisin sauce. Add some vinegar, water, sugar.
- Stir and cook for 5 minutes, till the sauce is slightly thickened.
- Add the fried chicken. Toss the chicken just to coat the sauce. Sprinkle sesame seeds and serve.
