Making Dhaba dal tadka is ultimately an easy recipe to make! All you need to cook the dal along with veggies and finally spices are seasoned with ghee.

I have used masoor dal (split pink lentils ) for this recipe, you may use yellow dal.

The whole flavour of this dish relies on the tadka/seasoning. The spices are beautifully sizzled in ghee and the aromas are completely infused in ghee makes it truly delicious.

How to make Dal Tadka:

Wash dal and add to a pressure cooker.

Add 2.5 cups and pressure cook for 4 to 5 hisses.

Once the pressure is naturally released, whisk the dal, add some sugar and mix well.

Heat ghee to tadka pan, add cumin seeds, crushed garlic pods, curry leaves and dry red chilli. Stir fry for a minute till the aromas are infused in ghee.

Tips to make the best dal Tadka:

1. Use ghee for best flavours for this recipe. You may use sesame oil or any vegetable oil will work fine!

2. Lightly Crush the garlic with skin on for seasoning that brings out the great flavour and taste to this recipe.

3. Add a little pinch of sugar that works like a magic for this recipe.

4. Add some chopped coriander leaves before you serve.

2. How long can I refrigerate this recipe?

This recipe can be refrigerated for 3 days! Just pressure cook the dal and veggies. Store in an air-tight container.

Before you serve, just do the seasonings and serve.

3. How to get the smoky flavour in dal tadka?

The smoky flavours in the dal tadka are through the Dunger method,

All you need to do is, once the dal is cooked, heat the charcoal in the direct flame till it appears to be in red, Keep the steel bowl in the centre of the dal, then place the charcoal carefully in the bowl.

Drizzle 1 teaspoon of ghee over the coal. Cover for 10 minutes. Then open the lid, discard the coal and carefully remove the bowl Now the smokey dal tadka is ready.

Ingredients

Scale
  • 1/2 cup Toor dal
  • 1onion
  • 1 tomato
  • 2 green chilli
  • 1 sprig curry leaves
  • 1 teaspoon Turmeric powder
  • 1teaspoon salt
  • 2.5 cups of water.
  • 1/2 teaspoon sugar

For seasoning:

  • 1 Tablespoon ghee (clarified Butter)
  • 1 teaspoon cumin seeds
  • 6 garlic pods
  • 3 dry red chilli
  • 1 sprig curry leaves
  • 1/2 tsp asafoetida

Instructions

  1. Wash Toor dal for a couple of time, add to the pressure cooker.
  2. Add sliced onion, chopped tomato, green chilli, curry leaves, turmeric powder, and salt. Add 2.5 cups of water and pressure cook for 4 to 5 hisses.
  3. Release the pressure naturally! Then, using balloon whisk mix the dal till they are lightly creamy. Add sugar and stir.
  4. For tadka:
  5. Heat ghee in a small tadka pan, add cumin seeds, crushed garlic, dry red chilli, curry leaves. Stir for a minute.
  6. Add the seasonings to the dal. Mix and serve.
