Cilantro lime Rice recipe – Make this super tranquil, delicious cilantro rice, perfect for all the occasion and the most satisfying subtle flavors will make you crave for more! 


  • 2 Cups Basmati Rice 
  • 2 teaspoon olive oil 
  • 5 garlic cloves ( sliced)
  • 1 teaspoon lime zest 
  • 1 teaspoon lemon juice
  • 1/2  Cube Veg / chicken stock. 
  • 1/2 cup  – Cilantro leaves. ( Finely chopped)
  • 3 cups water
  • Salt to taste  


To garnish: 

  • 1/4 cup cilantro 
  • 1 lime ( sliced)


  1. In instant pot, Press the “sauté” button, Pour in olive oil in the cook pot, once the oil heats up, add sliced garlic. Stir fry the garlic for few seconds until the flavors are infused.
  2. Stir in basmati rice and lime zest. Toast the rice for 2 to 3 minutes.
  3. Add in lime juice, veg stock cubes ( gently crush the cube so that it melds easily) salt, cilantro, and 2 cups of water.
  4. Gently mix to combine. Seal the lid, move the pressure vent to seal, and pressure cook for 10 minutes. 
  5. Once the rice is cooked, Fluff up the rice using a fork, stir in fresh cilantro leaves and serve.  


This recipe is intended for long-grain rice, such as basmati or Jasmin rice. If you’re going to use brown rice, you’ll need to adjust the ingredients as well as the water measurement.

Washing the rice under running water removes the starch, resulting in nonsticky rice.

Toasting the rice imparts a nutty flavor while ensuring that the rice remains individual grains and does not clamp.

Instead of a spatula, fluff the rice with forks.

Chicken stock cubes can be used instead of vegetable stock cubes.

You can drizzle a tablespoon of butter over the warmed rice.
