Chicken Quesadilla

Make this chicken quesadilla recipe it is simple, easy and delicious to make with minimal ingredients and the variations are countless!


  • 1 tablespoon olive oil
  • 1 cup boneless chicken
  • 1 tablespoon garlic
  • 1 onion
  • 2 tablespoon corn kernels.
  • 1 teaspoon chilli flakes
  • 1 teaspoon Mexican seasonings
  • 1teaspoon oregano seasonings
  • 1 tablespoon jalapeno
  • 1 teaspoon butter
  • 3 Flour tortillas
  • 1/2 cup mozzarella cheese


  1. These all the ingredients to make Chicken quesadilla.
  2. Heat olive oil in a pan. Add minced garlic, chopped onion, salt. Stir fry the onions till they turn translucent.
  3. Add corn kernels and Add chicken pieces.
  4. Sprinkle some chilli flakes, Mexican seasoning, oregano seasoning, Mix and stir fry the chicken for 10 minutes or till the chicken is cooked.
  5. Add chopped jalapeno. Mix well. Now the chicken filling is ready!
  6. Melt butter in a pan. Place the tortilla cook for a few seconds and flip.
  7. Place the mozzarella cheese. Spoon some cooked chicken.
  8. Sprinkle some Mexican seasonings.
  9. Fold gently and cook till the tortilla is crisp
  10. Carefully turn on the other side and cook until it is crisp.


Tips to make the best Chicken Quesadilla:

1. Cook your quesadillas in butter instead of oil. This gives you an unmatchable taste and aroma. 

2. Allow the filling to cool down a bit. If you use a hot filling, the steam inside the quesadilla makes the tortilla soft and even soggy.

3. Use boneless, skinless chicken thighs or breasts as they cook wonderfully and are easy to shred.

4. You can add fresh garlic to the pan with the other vegetables if you like the garlicky flavour. You can also add a few drops of lime if you prefer. 

5. Cook until the chicken is tender. Sauté the veggies until they are cooked. Do not overcook veggies as they might become soggy.
