This Chicken Mappas is about to become your new family favorite, chicken is deliciously cooked in creamy coconut milk making it absolutely flavourful and cooked up further with flavourful spices and seasoning kicked up a notch!

Chicken Mappas Kerala style has become one of favorite and I should admit I have been making these regularly. If you love coconut milk this recipe is sure to hit in your home. It is a mild gravy with flavors of coconut milk, coriander powder.

What is Chicken Mappas?

Chicken Mappas Recipe is the coconut-based gravy from Kerala region, its mildly-spiced with a whole lot of coconut milk flavors. Ingredients are very simple no fussy. Best combo with roti, parotta, idiyappam, and appam.

How to make Chicken Mappas recipe with Step By Step process:

For Marination:

To a mixing bowl add chicken pieces
sliced onion, curry leaves and green chillies and cubed chicken pieces in glass bowl
Add sliced onion, curry leaves and green chilies
Ginger-garlic paste, onion, curry leaves and chicken are in glass bowl
Add ginger-garlic paste
a bowl of coriander powder and turmeric powder is being added ti chicken in glass bowl
Add coriander powder and turmeric powder
Rub the spice on to the chicken and marinate for 10 to 15 mins.

To a deep pan/ Kadai, add 2cups of coconut milk diluted with 1 cup of water

Add marinated chicken

Let the chicken cook in coconut milk for 10 mins

Once the chicken is half cooked in coconut milk Transfer to a bowl
mustard seeds and curry leaves is being sauted in oil in saute pan
To the same pan heat coconut oil, add mustard and curry leaves. Let it splutter.

Add chopped onions and salt and cook till the onions are translucent.
Add ginger-garlic paste and cook till the raw smell of the ginger-garlic leaves off.

Add chopped tomato and cook till the tomato turns mushy

Add chili powder and salt

Cook the onion and tomato masala well

Once the onion and tomato masala is well cooked, add chicken along with coconut milk

Stir the chicken, cover and cook for 10mins until you see a thin glaze of oil appears on top.

 Chicken Mappas is ready to be served!

Tips to make Best Chicken Mappas Kerala Style:

1.Coconut oil: Use coconut oil for the best taste.

2.Coconut milk: Make homemade coconut milk(1st Extraction milk) for the Authentic taste and flavor, if you’re opting for Canned coconut milk use quality products for best result.

3.Onion&tomato masala: Cook onions tomato with spices to a nice creamy consistency until it is well cooked.

Ingredients

  • Ingredients:
  • 1/2 kg chicken
  • 1 onion
  • 1 green chili
  • 1 tbs Ginger garlic paste
  • 1 tbs coriander powder
  • 1 tsp turmeric powder
  • 2 cups of coconut milk
  • 1 cup water
  • For Onion Tomato Masala:
  • 1 tbs coconut oil
  • 1 tsp mustard seeds
  • 1 sprig curry leaves
  • 1 onion
  • 1/2 tbs ginger-garlic paste
  • 1 to mato
  • 1 tsp chili powder
  • 1 tsp Garam Masala
  • 2 tsp salt

Instructions

For marination:

  1. To a mixing bowl, add chicken, curry leaves, sliced onion, chopped green chilies, ginger-garlic paste, coriander powder, turmeric powder, and salt.
  2. Rub all the spices on the chicken and marinate for 10 to 15 mins. You can also marinate for 30mins as well.
  3. To a deep pan, heat up coconut milk, add marinated chicken and cook for 10 mins over medium heat. Turn off the heat and transfer to a bowl.

For onion Tomato masala

  1. To the same pan, add 1.5tbs of coconut oil, add mustard seeds and curry leaves, chopped onions. Cook the onions till they are translucent.
  2. Add ginger-garlic paste and cook for 2 to 3mins until the raw smell disappears.
  3. Add chopped tomato cook till the tomatoes turn mushy.
  4. Add chili powder and Garam Masala and salt cook further for 3 mins.
  5. Now add the cooked chicken along with the coconut milk.
  6. Cover and cook for 10 mins until the oil appears on top.
