Chicken cutlet is made using minced chicken, chopped onion, spices, boiled potato, grated coconut and mix together to hold the shape of chicken patties. Breaded with semolina and shallow fried in oil to nice golden colour.

These all the ingredients to make chicken cutlet.
Minced chicken in a bowl
Take minced chicken in a bowl.,
Minced ginger, garlic, green chillies, chicken are in the bowl
Add chopped ginger, garlic and green chillies
Chopped onions are being added to chicken in a bowl
Add chopped onion
Add chilli powder, turmeric powder, fennel powder and salt
Add mashed potato, grated coconut, coriander leaves.
Add 1 egg
Mix everything well.
Take semolina/rava in a small plate.Take a small round portion of minced chicken, make a small patty shape. Press over the semolina.
Like this.. to cover on both the sides.
Heat oil in a frypan, place the chicken cutlet. Drizzle some oil on top. Cook for 5 mins.

 

Then, Flip the chicken cutlet and cook for another 5 mins over low-medium heat. Chicken Cutlet is ready to be served.

  • Chicken: You can buy minced chicken or Get boneless chicken, wash and pat dry the excess moisture and then mince using the food processor.
  • Coconut: The Goan chicken cutlet includes coconut that has unique flavour and texture to this recipe. Always use freshly grated coconut for the best results. 
  • Potato: Potato acts as a binding agent for this cutlet. Pressure cook the potato, remove the skin and mash them using a fork.
  • Delicate Cutlet: These cutlets are very soft and delicate in texture. So make sure to shallow fry them instead of deep fry. Shallow frying helps to reduce the usage of oil.
  • Semolina: These cutlets are coated with semolina, that gives you crunchy and coarsely textured. You may also use bread crumbs or Panko bread crumbs.FAQ:

How to bake chicken cutlet?

Preheat your oven to 220 C/400 F.

Arrange all the chicken cutlet in a baking tray, spray some cooking oil all over the cutlets on both the sides and bake for 20 to 25 mins, until the cutlets are golden in colour.

How do you know the chicken patties are done?

Minced chicken usually takes less time to cook. Once the chicken turns to a nice golden colour, Pick the chicken cutlet using a toothpick, if the juice escapes are clear then it is done. If the juices are pink in colour, you may need some more time to cook.

What goes good with chicken cutlet?

Chicken cutlet can be served with ketchup or mint chutney.

Ingredients

  • 1 chicken breast chicken minced.
  • 2 potatoes boiled and mashed
  • 2 tablespoon grated coconut
  • 1 Tablespoon of finely chopped ginger
  • 1 Tablespoon of finely chopped garlic
  • 1 Green chilli
  • 1teaspoon Chilli powder
  • 1teaspoon turmeric powder
  • 1teaspoon fennel powder
  • 1 onion chopped
  • 1teaspoon lemon juice
  • 2 tablespoon chopped coriander leaves.
  • 1teaspoon salt
  • 1 egg
  • 1 cup semolina
  • 2tablespoon vegetable oil

Instructions

  1. Take minced chicken to a bowl, add all other ingredients except semolina/rava Mix well so that the spices are well incorporated.
  2. Now Take a small plate spread semolina to a plate.
  3. Now, take a small ball of, minced chicken and make a patty shape. Pat over on the rava on both the sides.
  4. Shallow fry the chicken cutlet for 10 mins over a medium heat until to a nice golden colour.
