Chicken cacciatore, cacciatore means “hunter” in Italian and it is the hunter who first ate this dish and the first cacciatore was not made of chicken at all, it was made of other meats.

This recipe was made during 16th centuries to satisfy the appetites of the hunger and the interesting fact and contrary belief chicken cacciatore easy recipe did not originally contain tomatoes, as tomatoes were brought to Italy from the new world later.

To a chicken thigh, add pepper powder, salt, chilli flakes and minced garlic. Rub the marinade over the chicken.

Let it marinate for 10 minutes.

Heat olive oil in the saucepan, add minced garlic

Add sliced onions, stir fry for until the onion turns translucent.

Add mixed herbs, oregano, chilli flakes, pepper powder. Stir and cook for just a few seconds.

Bring all onion and capsicum to one side of the pan,

keep the marinated chicken to the bottom of the saucepan.

Sear the chicken on both sides.

Add Tomato puree, tomato paste and just half cup of chicken stock just to immerse the chicken in tomato sauce.

Sprinkle a pinch of pepper powder, chilli flakes and salt. Cover and let it cook for 25 to 30 minutes. Stirring occasionally. Sprinkle some olives and parsley leaves.

Chicken: Use any part of the chicken for the best results. The skin on chicken that gives you the best flavour. You may use boneless chicken too but remember to check the cooking time.

Marination: I have marinated the chicken with minced garlic and few spices that help the chicken infuse more flavours.

Sear the chicken pieces in oil and cook on both the sides, the chicken has to be seared well on both sides.

Slow cook: Slow cook the chicken that gives you tender, juicy and wonderfully saucy chicken cacciatore.

To marinate:

  • 2 Thigh chicken pieces (skin-on)
  • 1/2 teaspoon chilli flakes
  • 1 teaspoon salt
  • 1/2 teaspoon pepper powder
  • 1/2 teaspoon of Garlic (minced)
  • To make chicken cacciatore:
  • 2 Tablespoon olive oil
  • 1 tablespoon garlic (minced)
  • 1 onion (sliced)
  • 1 yellow capsicum
  • 1 teaspoon mixed herbs
  • 1 teaspoon oregano
  • 1 teaspoon dried basil
  • 1 teaspoon chilli flakes
  • 1 teaspoon pepper powder
  • 1.5 cup of tomato puree
  • 2 teaspoon tomato paste
  • 1/2 cup chicken stock
  • 5 Olives
  • 1 sprig of parsley or coriander leaves

Instructions

To marinate:

  1. Wash the chicken and pat dry.
  2. Add pepper powder, chilli flakes, salt, minced garlic to a chicken, thoroughly mix the marinade and set aside for 10 minutes.
  3. To make chicken cacciatore:
  4. Heat olive oil in the saucepan, add minced garlic and onion. Stir and cook for a few minutes.
  5. Make sure to stir otherwise the garlic tend to stick to the bottom of the pan.
  6. Add sliced onions, stir fry for until the onion turns translucent. Add capsicum, mixed herbs, oregano, chilli flakes, pepper powder.
  7. Stir and cook for just a few seconds.
  8. Bring all onion and capsicum to one side of the pan, and keep the marinated chicken to the bottom of the saucepan.
  9. Sear the chicken on both sides.
  10. Add Tomato puree, tomato paste and just half cup of chicken stock just to immerse the chicken in tomato sauce.
  11. Sprinkle a pinch of pepper powder, chilli flakes and salt. Cover and let it cook for 25 to 30 minutes. Stirring occasionally.
  12. Sprinkle some olives and parsley leaves.
  13. Chicken Cacciatore is ready!
