These delectable fishes are bright, fresh, and flavourful juicy, and this vanjaram fish fry is marinated with a handful of freshly pound spices.

The whole fish fry comes together in less than 30 minutes with only 10 minutes of cooking time.

The seer fish fry is incredible layers of flavor that anyone or even the entry-level cook can make it easy.

All you need do is to, slather the ground masala over the fish and shallow fry them.

How To Make Vanjaram Fish Fry :

Add all the above ingredients to your blender then 2 tablespoons of water and grind to a smooth paste. (Add water little at a time for the right consistency)

Rub the ground masala over the fish on both sides. Cover and Set aside to marinate for 15 to 30 minutes.

Once the fish is marinated, Heat Peanut oil in a wide pan, Place the marinated fish cook for 3 minutes on each side over medium heat.

When the fish is fried to a nice golden color on both the sides and remove the fish using a slotted spoon that removes the excess oil. Transfer to the serving plate, sprinkle chopped curry leaves or coriander leaves.

Tips and Substitution:

  1. Buy the fresh and Good quality Seer fish for the best results.
  2. I have used shallots for this recipe, it has the mild and delicate flavor, you may also substitute with red onion.
  3. I always prefer using cold-pressed peanut oil /gingelly oil for any of the Fish recipes I make because it has a lot of health benefits and the taste is certainly enhanced. However, you can also substitute with vegetable oil or coconut oil.
  4. When you blend the spices make sure to add little water at times to get the right texture of the masala.
  5. Marination is the key to get the utmost flavor of the fish. You may also marinate for 30 minutes to 1 hour.

Fish with a mild scent and clear, moist flesh is fresh.

The whole fish has to be bright, bulging eyes with bright red or pink gills indicate the fish is fresh and can be used for cooking.

Frozen fish should also meet the fresh smell test for the best results.

Do not buy the fish that has a strong and fishy odor.

  • What are the other fishes can be used?

The same spice blend can be used for other fishes as well, Fishes like pomfret, Sheela/barracuda fish, any thick fleshed fish will work.

  • Can I Air fry the fish?

Yes, you can fry the fish using the Air fryer.

Here it is how you can air fry,

Place the marinated fish on the air fryer basket, drizzle 1or 2 teaspoons of oil all over the fish, and Air Fry for 15 to 20 minutes in 200 degrees Celsius.

  • How do you serve this vanjaram fish fry?

Vanjaram fish fry can be served with simple sambar rice, Rasam Rice, or curd rice or if you’re someone who prefers to eat just like that please go for it. This tastes YUM.

Ingredients

Scale
  • 2 Seer Fish 
  • 2 tablespoon peanut oil 
  • To grind: 
  • 8 shallots 
  • 1/2 tablespoon fennel seeds 
  • 2 tablespoon Kashmiri chili powder 
  • 1 piece tamarind (around 1-inch ball) 
  • 3 tablespoon coconut 
  • 1 teaspoon Turmeric powder 
  • 1/2 teaspoon salt 

Instructions

  • Wash the seer fish and keep them ready.

To make Marinate: 

  • To a blender, add shallots, fennel seeds, chili powder, tamarind, coconut, turmeric powder, salt, and 2 to 3 tablespoon of water and pulse to a very smooth paste. Now the marinade is ready. (Check for salt or spiciness add if you want)

Marinating the Fish:

  • Rub the Fresh ground masala over the fish thoroughly on both sides and let it marinate for 15 minutes to 30 minutes.

Fry the fish:

  • Over low- medium heat, place the Tawa or a wide pan, add 2 to 3 tablespoon of peanut oil.Once the oil heats up lightly. 
  • Gently place the marinated fish on the Tawa and cook for 3 minutes on each side of the fish turns to a golden color.  
  • Transfer the fried fish using a slotted spoon that removes the excess oil. Sprinkle chopped curry leaves and coriander leaves.
