My Favourite Carrot Cake Recipe with Cream Cheese Frosting

This Carrot cake recipe with cream cheese frosting is soft and delicious is one of the easiest cakes to bake. Beginners too can bake this bake to perfection. It is a great choice for events like kids’ birthday parties and highly nutritious.

My family loved this carrot cake recipe because of its subtle and sweet flavour of the carrot with added nutrient value and the fact that it was very easy for me to bake quickly.

This carrot cake has just 3 simple steps – make the dough, bake and frost. It can also be served without the frosting if that is how you prefer it.

It can be zapped up by adding roasted nuts and raisins to give it some texture and flavour and Whipping up the frosting at home is easy too!

This carrot cake recipe can be baked in an oven or cooked in a pressure cooker.

To enhance the flavour of the carrot cake, I have used pineapple puree and pineapple juice, this carrot cake with pineapple gives you more intense taste and flavour. You can also omit to add them.

This cake batter can be totally customizable, you can bake carrot cake muffins or carrot cupcakes.

How To Make the Best Carrot Cake Recipe:

To a mixing bowl, add all-purpose flour, baking soda, baking powder, ground ginger, ground cinnamon, salt.

Mix well and set aside.

To another bowl, add eggs and brown sugar.

Whisk for 3 to 4 minutes till the brown sugar is melted

Brush some butter to the baking pan, place parchment paper or baking paper.

Whisk for 2 to 3 minutes to a get a creamy texture, add Vanilla essence as well.

Add icing sugar, whisk and combine to form a cream cheese frosting.

Once the cake cooled down, Slide the side of the pan using a butter knife. Invert in a pan.

Remove the parchment paper. Apply the cream cheese frosting all over the cake.

Tips to make the carrot cake recipe:

1. Mix all the dry ingredients in a bowl.

Whisk well. Mix all the wet ingredients in another bowl and whisk till all the ingredients are combined.

Finally, mix the wet and dry ingredients using the cut and fold method.

This will make sure that all the ingredients are mixed well and there are no lumps. 

2. To season your carrot cake to give it an authentic and subtle flavour, use ground cinnamon, and a pinch of nutmeg.

The resulting flavour is just magical!

3. Tap the baking pans on the counter a few times to get rid of the air bubbles.

This will give you an even layer of cake with an almost flat surface. 

4. Mix only as much as necessary for the wet and dry ingredients to combine.

Over mixing the dough will release the gluten in the flour and the cake gets baked to hard texture. 

5. To prevent sticking of the cake to the sides of the pan, grease it and dust it with flour.

You can also layer with parchment paper if it is available.

This will ensure that the edges and sides of the cake are level and clean.

Wrap the cake with plastic wrap and then cover tightly with aluminium foil.

This can help you store the carrot cake for up to 4 months in the freezer. 

2. How to grate the carrot for this carrot cake recipe?

Chop off both the ends of the carrot. Peel it.

Use a shredder or food processor to grate it. If you are using a grater, use the finest holes apart from the zester.

You can grate it fine this way. 

3. What frosting the carrot cake?

You can use butter and icing sugar or cream cheese or any frosting of your choice.

You can also add pineapple extract or vanilla extract for an enhanced flavour.

Some people prefer only a plain frosting, but you can go rogue and play around with flavours that you like for the frosting.

Once the cake is baked, refrigerate the layers so that they don’t crumble during the frosting process.

Carrot cake tastes best the next day and moist on the 2nd day as well.

Ingredients

  • 1 1/2 cup carrots (Grated)
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon salt
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 1/2 cup brown sugar
  • 1/2 cup pineapple puree
  • 1/2 cup pineapple juice
  • 1 teaspoon Vanilla Essence
  • 3/4 cup Almonds
  • 1/2 cup Raisins
  • For Frosting: 
  • 1 cup Cream cheese
  • 1 tablespoon butter
  • 3/4 th cup icing sugar
  • 1 teaspoon vanilla essence

Instructions

  1. Pre-heat oven to 350 degrees F/ 180 degrees C.
  2. To a mixing bowl, add all-purpose flour, baking soda, baking powder, ground ginger, ground cinnamon, salt.
  3. Mix well and set aside.
  4. To another bowl, add eggs and brown sugar.
  5. Whisk for 3 to 4 minutes till the brown sugar is melted
  6. Add vanilla essence, pineapple puree, pineapple juice.Mix, just to combine everything.
  7. In goes the grated carrots, almonds and raisins.  Mix to incorporate.
  8. Add the flour.Gently fold the batter to incorporate.
  9. Brush some butter to the baking pan, place parchment paper or baking paper.
  10. Pour the batter in  and bake for 35 minutes to 40 minutes.
  11. Add cream cheese and butter to a mixing bowl
  12. Whisk for 2 to 3 minutes to a get a creamy texture, add Vanilla essence as well.
  13. Add icing sugar, whisk and combine to form a cream cheese frosting.
  14. Once the cake cooled down, Slide the side of the pan using a butter knife. Invert in a pan.
  15. Remove the parchment paper.
  16. Apply the cream cheese frosting all over the cake.
