Cabbage poriyal or muttaikose poriyal ( in Tamil) is one classic recipe that is the chopped cabbage with lightly spiced dry red chillies, green chilli and stir-fried with grated coconut that gives you intricate texture.
The seasonings are mustard seeds and urad dal is roasted to a golden brown colour that gives you nutty crunch to this cabbage poriyal.
It is served as side dishes for sambar rice, rasam rice or even for roti.
Every household has its version of cabbage poriyal.

1.Cabbage: Get the cabbage that is crisp and fresh. You can choose the purple cabbage as well.
2.Coconut oil: I have used coconut oil for this recipe, you can swap to any vegetable oil, gingelly oil or sesame oil.
3.Seasoning: I have used urad dal, you may use channa dal for the more crunchy texture.
4.Coconut: Adding freshly grated coconut gives you more flavours to this recipe. If you do not have coconut feel free to add desiccated coconut.
5.Veggies: You may add chopped carrots and peas along with the cabbage to a healthy veggie poriyal. Make sure to chop or grate the carrot that helps to cook faster.
