I love okra/ladies finger so much, I pretty much get every week from stores. It is easily cooked vegetables and a little bit of seasoning is enough to make it yummy!
This Bhindi Masala just tasted like the one I tried in dhaba. It is just super delicious just like a dhaba style Bhindi Masala.

The final sprinkle of roasted and ground peanut powder makes it scrumptious!

spices like fennel seeds, chillies, curry leaves is being sizzled in hot sauce pan
In a saute pan heat up some oil , add fennel seeds, curryleaves and green chilli.

Add chopped onions and cook till they are translucent
chopped tomato is being added to onions saute pan
Add chopped tomatoes and cook till they are mushy.
spice powders are added in saute pan along with chopped onions
Add chilli powder and turmeric powder
masala is being cooked in saute pan
saute for 2 to 3 mins, if the onion tomato masala sticks to the bottom of the pan, add 1 or 2 tbs of water
chopped okras is being added to saute pan
Add chopped bhindi / okra
okra is being cooked with tomato masala in saute pan
Give a good mix, add 1/4 cup of water. mix well. cover and cook for 8 to 10 mins.
peanut powder is being sprinkled over the okra in saute pan
Once the bhindi/okra is cooked, add peanut powder. Mix well and cook for 2 mins.

Tips to make the best Bhindi Masala recipe:

 Get good quality okras which are tender and firm

 For this recipe, you can directly add the chopped okras to the onion tomato masala( you need not fry them before)

 Wash and pat dry on the paper towel and Chop your ladies fingers finely for even cooking.

 You can add some crushed ginger and garlic for more flavors.

 You can add spices like coriander powder,garam masala or dry mango powder as well.

 Add only the required amount of water, cover and cook for 5 to 6 mins or till the okras are done.

 You can add 1 tbs of cream to get a creamier version of Bhindi Masala, once you turn off the heat.

2.How long can I store this dhaba style Bhindi Masala?

Properly stored bhindi masala in an air-tight container will last for 3 to 4 days.
Warm them in the microwave for a minute before serving.

3.Can I make any another veggie?

Yes, veggies like capsicum, potato, cauliflower, broccoli, carrot or cottage cheese/Tofu can also be used.

  • 1 cup ladies finger
  • 2 tbs oil
  • 1 tbs fennel seeds
  • 1 sprig curry leaves
  • 1 onion
  • 1 to mato
  • 1 green chilli
  • 1 tbs chilli powder
  • 1 tsp turmeric powder
  • 1/4 cup peanut powder
  • 1 tsp salt

Instructions
