Arachu Vitta Sambar Recipe | Traditional TamilNadu Sambar,
Hello Folks! hope you all doing good 🙂 Do u want to try something yummy southindian food?? huh?? I will say in a Big Louder voice ” TRY THIS” !!! The most staple food of southindia is Sambar, we make every other day!! There are lot of varieties of sambar from place to place, i should say it differs from every household, here i shared my Amma’s recipe which is the Arachuvita Sambar. In tamil Arachuvita means “Grinded” so this sambar it has the freshly grinded powder that take this sambar more flavourful and tasty! In this recipe i added carrot, you could also use any veggies of your favourite, even its taste good without any veggies! This sambar we make once in a week and serve with simple chettinad potato fry or Bittergaurd fry. Do try this recipe,I’m sure you will love it!:) 🙂

Arachuvita Sambar/how to make southindian style sambar
- Prep Time: 5 minutes
- Cook Time: 20 minutes
- Total Time: 25 minutes
Ingredients
- TO PRESSURE COOK DAL:
- Toor dal- 1/2 cup
- Turmeric powder- 1 tsp
- hing- 1 tsp
- salt- to taste
- oil- 1 tsp
- TO GRINDING:
- Coriander seeds- 1 tsp
- Channa dal- 1 tsp
- Coconut – 1 tsp
- Dry red chilli- 3
- Fenugreek seeds- 1 tsp
- TO MAKE SAMBAR:
- Small onions- 1/2cup
- Tomato- 1
- chillies- 2
- carrot – 1
- tamarind extract- 2 tbs
- Chilli powder- 1 tsp
- TO SEASONING:
- Oil- 1 tsp
- Mustard seeds- 1 tsp
- Cumin seeds- 1 tsp
- Curryleaves- 1 string
Instructions
- Add toor dal, turmeric, hing, salt, oil and 2 cups of water pressure cook for 5 whistles.
- Roast and grind the ingredients given under the list.”TO GRINDING”
- Add onions, tomato, chilli + 2 cups of water into the cooked dal, cover and cook for 10 minutes
- Add tamarind extarct, chilli powder, grinded mixture, salt cover and cook for 10 minutes.
- Heat up the small pan add all the ingredients given under “TO SEASONING”
- Add them to sambar and switch off the stove.
- Arachuvita sambar is ready!
