  What is sticky toffee pudding?

Sticky Toffee moist cake/ pudding is made with chopped dates that give this cake exceptionally distinct flavour and a pleased teatime cake.

The real hero of this recipe is the Toffee sauce made of butter, double cream, brown sugar, vanilla extract poured over the best makes this cake greatly moist and furthermore sticky!

Indeed, You can make toffee pudding without dates.
Alternatively, You can add 2tbs of Treacle/dates syrup in cake batter and follow the same method.

Variations you can make:

Flavours: You can add a dash of cinnamon powder/nutmeg powder in the cake batter.

Raisins: You can add raisins to build-up rich flavours.

Sticky toffee pudding with butterscotch sauce:

Bring 3 tbs of sugar with 1/2 cup of water to boil simmer for few minutes to develop a reduced rich golden caramel. Add cream and butter simmering for 5 min to make butterscotch sauce.

Sticky toffee pudding with salted caramel sauce:

Bring 3 tbs of sugar with 1/2 cup of water to boil simmer for few minutes to develop a reduced rich golden caramel. Add cream and butter simmering for 5 min, finally sprinkle 1 pinch of salt to make the salted caramel sauce.

How long does the homemade sticky toffee pudding last?

This toffee pudding cake keeps well for 4 to 5 days in an airtight container in the refrigerator and in the freezer up to 3 months.
Both the pudding and toffee sauce can be made ahead of time and stored separately in the fridge. Before you serve, warm the pudding in microwave high for a minute.

How to make sticky toffee pudding step by step:

 

Ingredients are taken in small glass bowls to make sticky toffee pudding
Ingredients to make Sticky Toffee cupcake
Chopped dates are placed in wide bowl
Take seedless dates and chop them finely
chopped dates and baking powder is taken in wide mixing bowl
in a bowl take your chopped dates with baking powder
Hot water is being poured over the date and baking powder taken in wide bowl
Add in hot water and set aside for 10 minutes
All purpose flour is being sifted in a wide glass mixing bowl
Mean while will make the cake batter, sift flour and baking soda in a mixing bowl
All purpose flour and softned butter is taken in glass mixing bowl
Add softened butter
All purpose flour and butter are crumbled in glass bowl
Crumble them using your finger tips.. it should look like a coarse mixture
Crumbled flour,egg,vanilla essence,brownsugar is taken in wide glass mixing bowl
Add in brown sugar and egg, vanilla essence

mix well so that everything is combined
Chopped dates is added to the pudding batter in a glass mixing bowl and mixed using a balloon whisk
now add our dates with soaked water, make sure you mix the batter and check for consistency and then add dates water..little by little

See, we got our batter into a pourable consistency
pudding mixture is filled in cupcake liner and placed in baking tray
Line a baking tray with cupcake wrapper and pour in the cake batter
pudding mixture filled 3/4th in cupcake liner in black baking tray placed in oven rack
Bake them in a pre-heated oven for 180 degree 30 minutes.
In small pan, cream,brown sugar,butter is taken
Lets a make Toffee sauce: In a small pan, add double cream, brown sugar, butter.
Toffee sauce is bubbling in a small sauce pan
Stir for a 2 to 3 minutes to get the toffee consistency.. That’s it!! when your cake is ready! Drizzle toffee sauce on top.. !

Ingredients

Scale
  • 1 1/2 cup All purpose flour
  • 1/3 cup dates
  • 1 tsp Baking soda
  • 1 tsp Baking powder
  • 2/3 cup Hot water
  • 1/4 cup butter
  • 1 cup soft light brown sugar
  • 1 egg (beaten)
  • 1 tsp Vanilla extract

For Tofee Sauce

  • 2 Tbs butter
  • 5 Tbs Light brown sugar
  • 4 Tbs double cream

Instructions

  1. Pre-heat the oven to 180 degreeC( 350 Degree F)10 minutes before baking.
  2. Place the chopped dates in a bowl with baking soda and pour over a hot water, stir and then set is aside.
  3. Sift the flour and baking powder, add softened butter. Rub in between your fingertips until the mixture resemble crumble.
  4. Stir in the sugar, eggs, vanilla extract and the date mixture. Beat with the wooden spoon until smooth.
  5. Spoon into the baking case and bake for 25 mins until well risen. Leave it to cool for 5 mins.

To make the topping

  1. Place the butter, sugar and cream in a small pan over a low heat and stir until the sugar dissolves. Bring it to boil for 1 or 2 min until the mixture is thicken.
  2. Brush quickly on each cake as the mixture will set as it cools.
  3. Store them in a airtight container for 2 days.

Notes
