Prawn Ghee Roast is a popular Mangalore recipe whose origin is from a small town Kundapur, close to Mangalore.

This Mangalore Prawn Roast is a spicy, juicy, and most flavourful prawn roast recipe ever.

Prawns are marinated with curd, turmeric, and lemon juice and shallow fried to get the juicy and tender prawns and cooked in the freshly ground spices, this spice masala plays a huge role in getting the signature taste for this prawn ghee roast recipe.

Ingredients to make Prawn Ghee Roast Masala:

Prawn Ghee Roast Masala are dry red chilies, cumin seeds, coriander seeds, garlic, tamarind, fenugreek seeds.

How to make Prawn Ghee Roast:

Take prawns/shrimp, curd, turmeric powder, salt, and lemon juice.

Mix to combine and let it marinate for 5 minutes.

Meanwhile will make a Masala, These all the ingredients to grind, I have taken dry red chilies, coriander seeds, garlic cloves, cumin seeds, fenugreek seeds, tamarind.

Add into the blender and 1/4 cup of water.

Grind to a smooth paste and set aside.

To cook prawns: Add 1 tablespoon ghee to the pan.

Stir fry the prawns to cook. Collect the cooked prawns in a bowl and set aside.

To the same pan or Kadai add 2 tablespoon ghee.

Stir fry the masala for 4 to 5 minutes.

You can see a thin glaze of oil on the sides of the pan and the masala is slightly darkened.

Prawns: You may use any sized prawns for this recipe, make sure to clean and devein them before you cook.

Marination: You can marinate the prawns for overnights.

3. How to buy fresh Prawns?

Fresh prawns with the shell that has a firm and glossy appearance, if you find black spots on the shell it is the indicator that shrimp is no longer fresh.

While buying prawns/ shrimp you have two choices of buying a fresh or frozen.

Both will work but the frozen prawns will have total time to defrost and not as flavourful as fresh prawns cooked.
They also tend to cook tougher after cooking, so the fresh prawns are way better!

4. How long to cook the prawns?

You can tell when the prawns cooked as it will turn to a pink color and half curve shape.

For medium-sized prawns, it takes 3 to 4 minutes to cook.
For large shrimp, it will take 5 to 6 minutes and
For Jumbo prawns 7 to 8 minutes.

Ingredients

3 tablespoon Ghee

Marinade:

  • 1/2 kg Prawns
  • 1/4 cup curd/yogurt
  • 1 teaspoon turmeric powder
  • 1 teaspoon salt
  • 1 teaspoon lemon juice

To Grind:

  • 6 dry red chilies
  • 1 tablespoon coriander seeds
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon fenugreek seeds
  • 10 garlic cloves
  • 1 lemon sized ball tamarind
  • 1/4 cup water

Instructions

Wash and devein the prawns.

To Marinade te prawns: Take prawns/shrimp, curd, turmeric powder, salt, and lemon juice in a mixing bowl.

Mix to combine and let it marinate for 5 minutes.

To grind Masala:
